If you are a fan of crunchy granola like me you will not be disappointed with this amazing masterpiece. Be prepared to fill the house with a mouth watering aroma.
½ cup pumpkin seeds
½ cup sunflower kernels
2 tbsp organic cacao (optional)
¼ cup organic shredded coconut
½ cup organic coconut flakes
1/2 tsp Himalayan pink salt
2 tsp cinnamon, ground
2 tbsp grass fed butter, ghee or coconut oil
Optional extras - you may want to add 1 tbsp cacao nibs however I love it as is.
Preheat oven to 200 degrees
Melt butter, ghee or coconut oil
Toss all remaining dry ingredients together in a large bowl
Pour butter (or chosen healthy fat) over mixture and combine until ingredients well coated
Place mixture onto a baking tray lined with baking paper
Bake uncovered for around 8 minutes. The time will depend on your oven
Allow to cool and store in an airtight container or jar in a dark cupboard.
Enjoy 1-2 tablespoons as a topping on kefir, your smoothie, organic unsweetened coconut yoghurt or organic coconut cream.
