Hearty Fish Chowder

There is nothing better than warm, hearty chowder when the weather is cooler. This super easy recipe is packed full gut and brain loving fibre, healthy fat and antioxidants. Make sure you buy your fish sustainable and wild caught.

Ingredients

1 tbsp coconut oil

1 zucchini, chopped into small chunks

1 carrot, chopped into small chunks

½ broccoli, chopped into chunks

½ cauliflower, chopped into small chunks

2 stalks celery, chopped roughly

1 brown onion, chopped roughly

2 cloves garlic, minced

1 can of organic coconut milk

1 tsp ground turmeric

1 tsp caraway seeds

2 heaped tsp ground coriander

1 tsp Himalayan salt

2 tsp ground black pepper

¼ cup bone broth (optional)

400g sustainable trout (or salmon) (You can also use smoked trout, salmon)

 

Method

Heat oil, onion, garlic, herbs and spices in a casserole dish until onion is translucent.

Add broth and coconut milk, stir and bring to boil.

Add all ingredients except the fish. Toss through and turn heat down to medium heat.

Cook on medium heat for 25 minutes.

Take casserole dish off the heat and blend until thick and creamy using a hand held blender. A few visible chunks is fine.

Stir through flaked fish. Cover and leave for 2 minutes.

 

Serves 4
