Succulent Baked Drumsticks and Vegetables

This is my go to dinner recipe when I am after a super fast and no fuss, healthy meal. One that does not require much cleaning up afterward. Always make sure to get organic chicken to avoid those toxic hormones and antibiotics that are fed to conventional chooks which disrupt our gut flora.

2 tbsp fresh thyme

2 cloves garlic, minced

1 tsp fresh ginger, minced

2 tbsp organic butter, melted (Or coconut oil or ghee)

6 organic chicken drumsticks

1 tsp cardamom

1 tsp Himalayan salt

1 tsp ground black pepper

1/2 pumpkin with skin

1 onion, cut in quarters

1 large zucchini, chopped into big chunks

1/2 large eggplant, chopped into big chunks



Preheat oven to 200 degrees

Place drumsticks and chopped vegetables into a large bowl

Add herbs, salt and pepper and toss well

Place vegetables and chicken onto a tray lined with baking paper

Drizzle melted butter over chicken and vegetables

Bake for 50 minutes

serves 2-3
