Roast Pecans

I LOVE pecans with all of my heart. Out of all of the nuts they are my favourite after macadamias of course. I love them because of they are rich in antioxidants, are a good source of healthy fats, taste amazing and are a decent source of fibre. For more on their benefits have a read of this article. Cardomom is a great addition here because it helps to promote healthy digestion and reduce common digestive complaints such as gas, bloating and belching. We all need that occasionally don't we?

Ingredients

6 tbsp pecans

1/2 tsp himalayan salt

1/4 tsp cardamom

1 tsp ghee

1 tsp ground black pepper

 

Method

Preheat oven to 200 degrees.

Place all ingredients into a small bowl and toss well.

Place pecans on an oven tray lined with baking paper and bake for 5 minutes.

The house will smell delicious...You've been warned.

Leave to cool and sprinkle over salads such as Crunchy Roasted Pecan Shiitake Salad

 

Serves 2 as a sprinkle

Make double or triple and store in an airtight container in the fridge for future use.
