Ingredients

1/4 white cabbage, shredded ( I use a mandolin to slice)
1 carrot, grated
1/2 zucchini, grated
1/2 red onion, sliced finely
2 tbsp apple cider vinegar
3 tbsp olive oil (or more if you like)
1 1/2 tsp himalayan salt
1-2 tsp cracked black pepper
Juice from 1/2 lemon
2-3 tbsp hulled tahini

Method

Place all vegetables into a large bowl.
Add remainder of ingredients and mix well.
Enjoy as a side dish

Serves 3-4
